Oven Roasted Tomatoes




Oven Roasted Tomatoes
(makes 12 pieces)

6 plum tomatoes, halved lengthwise
salt and pepper
1 tbsp chopped rosemary or 1 sprig of thyme (optional)

Preheat the oven to 250 F. Put the tomatoes cut side up on a baking sheet and season with salt and pepper. Sprinkle with chopped rosemary or thyme sprigs, if using. Bake for about 6 hours, patience permitting. Let cool and store in an airtight container.
