Eggie Mash
Don't laugh. This is something I had as a kid, and for that reason, it can be as strange or as normal as ever: it's still nostalgia to me. We had it on sandwiches at lunchtime, with some lettuce and not much else. Much like a classic egg salad (like potato salad, but made with eggs), we mashed hard-boiled eggs with some softened butter and a little milk. A little salt and pepper to season...
Eggie Mash
(makes ~1 cup)
3 hard-boiled eggs, cooled, peeled, and chopped roughly
1 Tbsp. butter or margarine, softened
1 Tbsp. of milk, to loosen the mash
Salt and pepper, to taste
In a breakfast bowl and using a fork, mash the eggs and butter together. Add a splash of milk if needed to loosen the mash. Season with salt and pepper. Use in a sandwich, have plain, add to poached leeks, or mix with some shaved celery, cilantro, and toasted walnuts for a simple salad.
